SCD (Specific Carboyhydrate Diet)

People with Crohn's disease, celiac disease and other digestive disorders may benefit from following a specific carbohydrate diet (SCD). This diet eliminates sugars and hard-to-digest carbs like grains and grain products.

How the Diet Works:

The theory behind the Specific Carbohydrate Diet is that certain carbohydrates are not fully digested, so they remain in the gut and must be broken down by the bacteria there. This can cause an overgrowth of harmful bacteria, and waste products of the digestion process can set off a chain reaction, or “vicious cycle,” of irritation in the intestines.

By limiting your carbohydrates to only ones that are very easily digested, the idea is that there will be no undigested carbohydrates left over to cause overgrowth of bad bacteria and set off the chain reaction leading to irritation.

{Homemade, SCD Legal}

I modified this recipe to make my homemade frozen yogurt with only SCD legal ingredients (specific carbohydrate diet). It turned out so tart and delicious!

Here are the original ingredients and how I modified them:

2 1/3 cup whole milk yogurt (not Greek-style), I used Brown Cow Cream Top

2 1/3 cup White Mountain Organic Whole Milk Bulgarian Yogurt (24 hour fermented) - from Whole Foods

2/3 cup honey

1 Tbsp vanilla extract (you could also use real vanilla beans or 1/2 tsp almond extract- be sure to follow this amount as almond extract is more potent than vanilla)

pinch salt

2/3 cup heavy cream

2/3 cup Organic Heavy Coconut Cream

Equipment I used:

Cuisinart Frozen Yogurt, Ice Cream, and Sorbet Maker
